Cabernet Sauvignon fruit from a south facing block on the Campaspe River, just north of Redesdale, in a slightly cooler southwest corner of the Heathcote region. Harvested by hand in mid-March, to capture the rich black-current flavours, which are characteristic of the 2019 Vintage.
Post fermentation and a short period of stabilisation in stainless steel, the wine was racked into a combination of French (55%) and American (45%) oak Barriques. All barrels went through a secondary fermentation during the Spring of 2019. The wine was not fined before bottling.
This wine displays a stunning moody austerity, dark stone fruit character and an elegant mid-palate with a clean, lingering finish. A lighter style Cabernet Sauvignon, with traditional dry tannins.
