Grown amongst the cool, southern granite hills of the Heathcote faultline, our 2018 Chardonnay fruit was hand-picked in early March and taken straight to the winery for processing. The whole bunches were lightly pressed to promote freshness and then stored in a combination of new and old French oak Barriques for about 9 months before bottling in February 2019.
This 2018 Charlotte Chardonnay exhibits crisp minerality and subtle French oak. Sixty percent of the Barriques were allowed to go through malolactic fermentation, enhancing buttery and vanilla undertones, with some held back to promote freshness and hints of acidity.
The palate exhibits delicate flavours of pear and apple blossom, a perfect match with soft cheese or spicy delicacies.
