Shiraz fruit from four premium vineyards running North to South along the Heathcote Faultline were blended to create this ‘Cambrian Rise’ Shiraz. The four vineyards were located in Colbinabbin (30%), Toolleen (20%), Heathcote (15%) and Kimbolton (35%). All vineyards were harvested by hand between late-February and mid-March and all fruit was transported directly to the winery the same day it was picked.
Post fermentation, the wine was racked in to a combination of French (65%) and American (35%) oak Barriques, using 20% new oak. All barrels were allowed to go through Malolactic fermentation during the Spring of 2016. A second racking occurred in late 2017, followed by cross flow filtration and bottling. The wine was not fined.
Great structural integrity on the mid palate, a rich Cambrian Shiraz with a lovely ‘soft start’ and fruit intensity, lush red berry flavours playfully lingering on the finish.
