Cabernet Sauvignon fruit from a south facing block on the Campaspe River, just north of Redesdale, in a slightly cooler southwest corner of the Heathcote region. Harvested by hand in early March, to capture the rich black-current flavours, which are characteristic of the 2016 Vintage.
The handpicked bunches were destemmed and fermented over a 12-day period in small, open fermenters with daily temperature control.
Post fermentation and a short period of stabilisation in stainless steel, the wine was racked in to a combination of French (60%) and American (40%) oak Barriques. All barrels were allowed to go through Malolactic fermentation during the Spring of 2016. The wine was not fined before bottling.
The wine displays a stunning moody austerity, dark stone fruit character and an elegant mid palate with a clean, lingering finish. Black rose and dulcet velvet plum, cooler Coliban climates yield a sophisticated, elegant Cabernet Sauvignon.
